Gravy Fritters (Kadhi Pakora)

Kadhi Pakora recipe is very famous in Pakistan, India and Bangladesh. This recipe is not only famous among the elders and older but kids too.

Ingredients

  • Full fat yoghurt β†’1kg

  • Gram Flour (Baisan) β†’ 8heaped tablespoon

  • Garlic chopped β†’ 2 tablespoon

  • Ginger β†’ 1 tablespoon

  • Salt β†’ 1 tablespoon

  • Turmeric β†’ 1 tablespoon

  • Water β†’ 2 jugs

  • Star anis β†’ 3

  • Black Cardamom β†’ 3

  • Cinnamon β†’ 1 Stick

  • Cloves β†’ 8

  • Fenugreek seeds β†’ 1tablespoon

  • Dry fenugreek leaves β†’ 1 tablespoon

  • Nigella β†’ 1teaspoon

Fritter (Pakora)Iingredients

  • Gram Flour β†’ 2 cups

  • Onion β†’ 1 large (sliced)

  • Green Chilli β†’ 8 Cut into small pieces

  • Green Coriander β†’ 1 Cup

  • Salt β†’ 1 teaspoon

  • Crushed Red Chilli β†’ 1 tablespoon

  • Dry Coriander β†’ 1 Tablespoon (Crushed)

  • Corn Flour β†’ 1 Tablespoon

  • Baking Powder β†’ Β½ Teaspoon

  • Oil for frying

    Tempering

  • Oil β†’ Β½ cup

  • Onion β†’ 1 Small (Sliced)

  • Cumin seeds β†’ 1 teaspoon

  • Whole Red chilies β†’ 8 to 10

Recipe Instructions

Blend yogurt, water, gram flour, turmeric powder, salt and garlic, ginger on a high speed to make it smooth and put into big wok.

Add all whole spices and fenugreek seeds. Mix it and keep on high flame till it boil.

After boil flame must be low with cover the lid.

After an hour and half, check its consistency, it should not be very thick as the Pakoras will make it thicker. It should not be watery as well. Taste it and if you feel gram flour is cooked and aroma of kadhi is tempting then remove all whole spices with strainer (watch the video for clarity). Now remove the lid and stir for few minutes. Add dry fenugreeks leaves and nigella seeds and stir for few minutes.

Now add fresh pakoras and stir it well, cook for few minutes and add temper in it. At the end garnish with fresh coriander.

Fritter (pakora) Recipe

Mix all the pakora ingredients with water to make a medium consistency paste, not too thick or too thin.

Gravy Fritter Kadhi Pakora Indian Recipe

Heat oil in a wok and scoop a tablespoon out of the mixture to fry Pakoras. Watch the video for clarity.

Tempering

Temper 1

Heat 2 tbsp oil in a pan and add onions to it. When the onions turn golden brown then immediately add temper to kadhi.

Temper 2

Heat 2 tbsp oil in a pan and add cumin seeds to it. When the cumin seeds turn dark golden brown then immediately add temper to kadhi.

Temper 3

Heat 2 tbsp oil in a pan and add whole chilies seeds to it. Just fry for 1 minutethen immediately add temper to kadhi.

Tips

Don’t burn the ingredients, make them dark brown and whole chilies should be just little fry.

Take the sour yogurt for the Kadhi and it will be the most yummiest.

If you don’t have ginger garlic paste then you can grind them with yogurt.

If yogurt is not enough sour, then add 2 tablespoon of vinegar or lemon juice.

Serve

You can serve it with, Roti, naan or rice.
