Eggplant / Brinjal Chaat Recipe

Eggplant or Brinjal chaat recipe is different and unique recipe. Must try it.

Ingredients

Eggplant β†’ 4 (Cut into Sliced)

Sweet Sauce

Raisin→ 2 Tbs

Dry Apricot β†’ 4 Tbsp

Water β†’ 1 Cup

Red color β†’ 1 Pinch

Jaggery β†’ Β½ Cup

Black Salt β†’ Β½ Tsp

Green Sauce

Mint β†’ Β½ Cup

Tamarind β†’ Β½ Cup Plup

Green coriander β†’ Β½ Cup

Green chili β†’ Β½ Cup

Salt β†’ Β½ Tsp

Yogurt

Yogurt→ 2 Cups

Batter for Coating

Gram Flour β†’ 2 Cups

Rice Flour β†’ 2 Tbsp

Corn Flour β†’ 1 Tbsp

Red Chili β†’ 2 Tbsp Crushed

Carom Seeds β†’ 1 Tbsp

Salt β†’ 1 Tsp

Water β†’ 1& Β½ Cup

Frying

Oil β†’ 2 Cups

Garnishing

Onion→ 1medium (Cut into sliced)

Tomatoes β†’ 1 medium (Chopped)

Sweet Sauce

Heat the pan and boil sweet chatni ingredients altogether on medium to low heat for 5 minutes, or until ingredients get soft.

Grind all ingredients with its boiled water, sweet sauce is ready. Keep it aside.

Green Sauce

Grind all green sauce ingredients together. Green sauce is ready. Keep it aside.

Yogurt

Wisk yogurt. Keep it aside.

Batter

Mix all dry ingredients and add water gradually and mix it well. You can use water according to your quantity. Batter is ready. Keep it aside.

Recipe

Heat oil in a wok on medium to low flame.

Take eggplant slices one by one and coat with gram flour batter and put into heated oil.

Fry the slices for 7 minutes or until brown and crispy, on medium to low heat.

When golden, remove and drain on paper towel lined plate.

Slices are ready.

Assembling

Take a deep try

β€’ Spread yogurt in tray

β€’ put green sauce

β€’ put sweet sauce

β€’ put salad

β€’ keep fried eggplant slices.

β€’ sprinkle Chat masala (optional)

Repeat this process again and in last put all sauces and yogurt over them and garnish with onion and tomatos.
