Cauliflower and Potato Recipe

Cauliflower and Potato (Aloo Gobi) is a traditional dish in which potatoes (Aloo) and cauliflower (Gobi) are cooked with some basic vegetables and spices.

There are as many versions as possible of Cauliflower and Potato (Aloo Gobi) curry in Asian households. But this is an authentic recipe, so you don’t need another cauliflower and potato curry (Aloo Gobi) recipe.

Ingredients

Cooking Oil → ½ Cup

Onion → 2 Medium Size (Sliced)

Garlic → 1 Tbsp (Crushed)

Ginger → 1 Tbsp (Crushed)

Tomato → 3 Big sizes (chopped)

Turmeric Powder → 1 Tbsp

Coriander Powder → 1 Tbsp

Red Chili Powder → 1 Tbsp

Chili Flacks → 1 Tbsp

Salt → 1 Tbsp

Cumin Powder → 1 Tsp

All Species Powder → 1 Tsp

Water → 3 Tbsp

Yogurt → ½ Cup

Cauliflower → 2 Flowers (cut into small pieces)

Potato → ½ Kg

Green Chili → 6 to 8

Recipe

First, remove the leaves of the cauliflower and cut off the tough stem at the bottom. Quarter the cauliflower (cut in half and then cut both sides in half). Then cut into small pieces.

Add the cooking oil to a big wok and keep it on medium to low heat. Add onion and sauté until the onions turn golden. This is an essential component for forming the base (or masala) of many curries.

Add the garlic and ginger and continue to sauté so that the raw smell disappears, and the onions deep in even more in color. Once the onions are deeply golden, add the tomatoes along with the spice powder and salt.

Fully cook the tomatoes here until you can see the oil separating from the curry.

Add yogurt and mix just, don’t overcook.

Add the Cauliflower and mix with masala, now add potatoes and stir-fry to soften. Cover and allow the vegetables to steam over low heat. After cooking, if there’s moisture from the vegetables left, sauté it out. If you find that the vegetables are sticking to the bottom of the pan, then use water but in little quantity.

Remove the lid and add green chili and mix.

Dish out Curry.

Cauliflower and Potatoes Curry is ready.
