Chicken Karahi/Kadahi Recipe
Chicken Kadai (Chicken Karahi Curry) is a delicious chicken curry where chicken is cooked with freshly ground spices and some basic vegetables. This restaurant-style spicy chicken kadahi recipe is an easy and authentic recipe.
This dish is traditionally made in an Indian vessel called kadahi, a heavy-bottomed pot or a wok, hence the name.
Ingredients
Cooking Oil → 1 Cup
Ginger Garlic Paste → 8 Tbsp
Chicken → 3 kg
Tomatoes → 1.5 kg
Water → ½ Cup
Water → ½ Cup
Dry Spices
Red Chili Powder → 1 Tbsp
Red Chili Flacks → 1 Tbsp
Turmeric Powder → 1.5 Tbsp
Salt → 1 Tbsp
Dry Coriander → 1.5 Tbsp
Cumin Powder → 1 Tbsp
All Spices Powder → 1 Tbsp
Fenugreek Leaves → 3 Tbsp
Garnishing
Cooking Oil → 3 Tbsp
Butter → 4 Tbsp
Onion → 2 Large (Cut into Slices)
Green Chili → 10 Large (Cut into Slices)
Green Coriander → ½ Cup
Recipe
Tomatoes Puree
Cut all tomatoes into two pieces and put into a wok or pan and add water and keep it on medium to low flame for 15 minutes and cover the lid.
Remove the lid and remove all peels of tomatoes and beat well. Puree is ready. Keep it aside.
Curry Recipe
Put Cooking oil in a big wok on medium to low flame, add ginger garlic paste fry until raw smell goes away.
Add chicken and fry with ginger, garlic until chicken color turns to white. Cover the lid for 5 minutes.
Remove the lid and add tomato puree and add all dry spices except fenugreek leaves and mix well. Cover the lid for 5 to 7 minutes on medium to high flame.
Remove the lid and cook for 10 minutes on medium to high flame. Stir it frequently until the water gets dry.
Add fenugreek leaves and mix it with chicken karahi. Put off the flame and cover with lid for five minutes.
Dish out chicken karahi.
Garnishing
Garnish curry with green coriander.
Add cooking oil in a pan and add sliced onion and green chili and sauté them. Add butter and cook it for 1 minute more.
Put all sauté material over chicken karahi.
Chicken karahi is ready.
