Paratha with Filling of Radish (Mooli) and Pomegranate

Filling ingredients

  • Radish β†’ 2 large

  • Green corianderβ†’ Β½ cup (chopped)

  • Mint β†’ Β½ cup (chopped)

  • Green chili β†’ 1tsp (chopped)

  • Red chili flacks β†’ 1tsp

  • Salt β†’ 1tbs

  • Fresh Pomegranate seeds β†’ Β½ cup

Dough ingredients

  • Flour β†’ 3 cups

  • Salt β†’ Β½ tsp

  • Ghee β†’ Β½ cup

  • Water β†’ 1cup

Dough & Paratha

Follow these instructions

Paratha with filling of Reddish (Mooli) and Pomegranate
  • Take a bowl and put all dry ingredients and mix them.

  • Add water gradually and make a soft dough. Let the dough rest for 20 to 30 minutes. Cover with a kitchen napkin and keep it aside.

  • Meanwhile rinse, peel and grate radish, mix 1 tsp salt, and keep aside for 20 minutes, and later squeeze the water from it. Now add green chili, green coriander, fresh Pomegranate seeds, red chili flacks and mix them.

  • Filling is ready for mooli paratha.

  • Make two small size balls from dough and roll them into circle about 6 to 7 cm on the rolling board.

  • Take a good amount of mooli stuffing, and place it on one of the rolled dough.

  • Covered with the other rolled round and join the edges.

  • In the meantime, heat the pan, tava or griddle, roll the dough into size of pratha.

  • When the tava or griddle sufficiently hot then fry the paratha with ghee/oil/butter. When one side of paratha 1/3 cooked upside down and spread more ghee on this side. Flip again couple of time and spread ghee after some times until pratha got brown colour.

  • You can use spatula to press the edges.

  • Mooli pratha is ready to serve.

Serving

  • Serve mooli pratha hot and warm.

  • Serve with white and unsalted butter.

  • Serve with green chatni or achar of your choice.

  • Use fresh vegetables.

  • Make soft and smooth dough.

  • You can add more green chilies for more spicy taste.
