Chargha Recipe
A whole skinless chicken roast marinated in a creamy marinade. This chicken chargha is first steamed slowly to allow it to cook through and then fried for a deliciously crisp and golden outside.

Ingredients
Marination Ingredients
Yogurt β Β½ Cup
Garlic Paste β 1 Tbsp
Ginger Paste β 1 Tbsp
Green chili Paste β 1 Tbsp
Lemon Juice β 2 Tbsp
Salt β 1 Tsp
Chili Flacks β 2 Tbsp
Black Pepper β 1 Tbsp
Cumin Powder β 1 Tsp
All Spices Powder β 1 Tsp
Turmeric Powder β 1 Tbsp
Yellow Food Color β ΒΌ Tsp
Chicken
Skinless Whole Chicken β 1 (1.5 Kg) (Deep cuts into breast and legs)
Frying
Cooking Oil β 1 Cup
Recipe
In a bowl add all the marinade ingredients then mix to combine until a smooth paste forms.
Add the whole chicken and spread the paste all over the chicken then allow to marinate for at least 1 hour β for best results leave to marinate overnight.
In a pressure cooker add a steamer rack (or wire rack) in the bottom then add the water ensuring that the water doesnβt touch the steamer
Tie the chicken legs together using kitchen twine then completely wrap it with aluminum foil and keep it on the top of the steamer β the chicken should not be in contact with the water.
Bend the lid and give it pressure for 10 minutes after whistle.
Remove the lid and dish out it, remove foil and set aside for 10 minutes to allow it to cool down.
In the meanwhile, heat up a deep fryer until hot then add the cooled down chicken and fry for 5-6 minutes until crispy.
Dish out Chargha.
Chargha is ready.
Serving
Serve it with hot Roti or naan with yogurt green chatni and salad.
Suggestions
You can alter the frying to another method of cooking like baking or air frying. The traditional way is to steam it and then deep fry it. However, feel free to alter it depending on how you want to eat it!
