Eggplant Fritter Recipe
These crispy Brinjal Pakoras or eggplant Fritters is a very tasty dish.
Eggplant Fritters is a deep-fried Indian snack of crispy and tasty Brinjal fritters made with gram flour (besan), spices and herbs. It is very easy to make at home. It is also called rainy day dish.
Ingredients
Eggplants → 2 Big sizes (Cut into sliced)
Gram Flour → 2 Cups
Rice Flour → 2 Tbsp
Corn Flour → 1 Tbsp
Red Chili → 2 Tbsp Crushed
Carom Seeds → 1 Tbsp
Salt → 1 Tsp
Water → 1& ½ Cups
Oil → 2 Cups
Recipe
Cut eggplant into slices and put into salted water for 20 minutes.
After 20 minutes and drain the eggplant and pat dry. Keep it aside.
Batter
Mix all dry ingredients and add water gradually and mix it well. You can use water according to your quantity. Batter is ready. Keep it aside.
Frying
Heat oil in a wok on medium to low flame.
Take eggplant slices one by one and coat with gram flour batter and put into heated oil.
Fry the slices for 7 minutes or until brown and crispy, on medium to low heat.
When golden, remove and drain on paper towel lined plate.
Fritters are ready.
Serving
Serve it with sweet sauce, green sauce or ketchup.
