Carrot Sweet Pudding Recipe - Gajar ka Halwa
Gajar halva is called Carrot Sweet Pudding in English language.
Ingredients
Carrot β 2 kg
Full cream milk β 2 kg
Sugar β 4 tbs
Ghee/oil β 1 cup
Cardamom Powder β 1 tsp
Vinegar β 3 tbs (white)
Dry fruits β Optional
Milk powder β 1 cup
Recipe instruction
Please follow these steps:
Heat the milk until temperature reaches around 195 degrees. Remove from heat and stir in vinegar. Let stand for 5 minutes. Pour mixture into strainer or a pot lined with cheese cloth, rinse with cold water and keep it aside.
Trim the carrots and grate them. Put all grated carrots in a pan on medium to high flame for 5 minutes and cover the lid. Carrot will release a lot of steam, now again cover the lid up to 30 minutes on low heat.
Remove the lid, add ghee, sugar dry milk and curd continually on high flame until all water get dry, β’
Stirring as needed to make sure it does not catch at the bottom of the pan, at this stage donβt cover the lid.
At this stage ghee will be separating around the edges, the halwa will be cooked and things will be looking almost done.
Dish out the halwa and garnish with dry fruits.
Serving
Serve halwa hot and warm.
you can Serve with ice cream.
Tips
Use fresh and juicy carrots.
Use Desi ghee for good taste.
You can add more sugar, ghee, or nuts.
