Fresh Strawberry Cream Cake Recipe

This strawberry cake recipe is one of the simplest and most delicious cakes recipes you’ll ever make. This recipe is very easy. Don’t use vanilla sponge for this recipe. Use Strawberry sponge to make strawberry cream cake. Must try it.

Ingredients

Eggs β†’ 4

Sugar β†’ 1 Cup

Strawberry β†’ 2 Cups

All Purpose Flour β†’ 1 Cup

Corn Flour β†’ 2 Tbsp

Baking Powder β†’ 1 Tsp

Baking Soda β†’ 1/3 Tsp

Whip Cream β†’ 1 Cup

Milk β†’ 1 Cup

Condensed Milk β†’ 4 Tbsp

Recipe

Strawberry Puree

Add strawberries in beating jar and beat well. Puree is ready. Keep it a side.

Strawberry Crush

Cut into slices 1 cup Strawberry and put into a pan. Add three table spoon of sugar and mix it with spoon, keep it aside for 30 to 40 minutes.

After 30 minutes strawberries will release the water. Keep it on medium to low flame and cook for 7 minutes or until get thick.

Strawberry Crush is ready. Keep it aside.

Milk for cake sponge

Take a pan and add milk and 2 Tbsp sugar and 4 Tbsp of Condensed milk and mix it well. Milk is ready, keep it a side. (You can also use simple sugar syrup)

Strawberry Sponge Cake

Break 4 eggs, separate each egg white into another small bowl before pouring it into the mixer bowl. pour egg whites in beating bowl and attach the mixer bowl to a stand mixer fitted with a whisk attachment. You will notice that your egg whites have a foamy texture after beating them for 5 minutes and have stiff peaks.

Add 1/2 cup of sugar and beat. After you have firm peaks, continue beating for another 5 minutes. The texture of the mixture will also be thick and heavy.

Add yolks one by one beat egg white mixture on high speed for 5 minutes or until it becomes thick, fluffy, and triples in volume.

Add all-purpose flour, Corn Flour, Baking powder, Baking Soda, and stir it well and set aside..

Add flour mixture in beaten eggs, start with 1/3 flour mixture and mix, then Β½ and mix, then remainder of the flour and mix, till combined. Fold all this mixture softly.

At the end add strawberry puree and mix it softly.

Grease and line to pan with parchment paper.

Pour the mixture into pan and bake in pre heated oven at 180 degrees for 25 to 30 minutes.

After 30 minutes check the cake with knife or until the center of the cake springs back lightly when pressed.

Strawberry Sponge cake is ready.

Strawberry Cake Frosting

Add whipped cream in mixing bowl. Whip on medium for about 4-5 minutes or until stiff peaks start to form. Add strawberry Β½ cup of strawberry puree and wick it. Once the stiff peaks start to form, your whipped cream is set.

ASSEMBLING & DECORATING THE CAKE

Cut the cake into two layers. Place the first cake layer on your cake base or turn table. Pour ready milk on this layer, do not over drench the sponge, then spread cream frosting. You can use palette knife or spatula to evenly spread out the cream over the surface. Lay the cooked strawberries evenly and nicely over the cream. Continue this process for other layers.

You can finish off the cake by piping cream on the top. And make square edges. Fill these edges with cooked strawberries. Very beautiful and elegant strawberry rich cake is ready.
