Moti Pulao-Pearl Pulao Recipe
Moti Pulao Recipe is also called Pearl Pulao Recipe. This recipe is unique and different. Must try this recipe.
Ingredients
Meatballs
Chicken β 250 gm
Onion β 1 large
Green Chili β 6
Coconut Powder β 2 Tbsp
Dry Coriander β 1 Tbsp
Black Pepper β 1 Tsp
Corn Flour β 2 Tbsp
Salt β Β½ Tsp
Breadcrumbs β 2 Tbsp
Soya Sauce β 1 Tbsp
Vinegar β 1 Tbsp
Egg β 1
Pulao
Rice β 700 gm
Onion β 1 Large
Cooking Oil β Β½ Cup
Cinnamon β 1 stick
Star Anis β 2
Kari Leaves β 2
Black Pepper β 1 Tsp
Cloves β 10
Cardamom β 5
Dry Coriander β 1 Tbsp
Fennel Seeds β 1 Tbsp
Crushed Garlic β 1 Tbsp
Green Chili β 6
Ginger β 1 Tbsp
Dry Plum β 10
Turmeric Powder β 1 Tsp
Water β As needed.
Chicken Powder β 2 Tbsp
Salt β Β½ tsp
Lemon β 2
Saffron β 1 Pinch
Silver Paper β 7 to 8
Butter β 1 Tsp
Nuts β 1 Tbsp
Meatballs Recipe
In a chopper bowl, add onion and green chili, and chicken and fine chop.
Put all chopped material into a bowl and add all ingredients. Mix them all.
Grease your hands with cooking oil roll into ball shape.
Your meatballs are ready.
Pulao
Begin by rinsing 700gm basmati rice in water until it runs clear of starch. Next, soak the rice in enough water for 20 to 30 minutes.
Keep a big wok on high flame and put oil. When oil gets hot add onion, cinnamon, Star Anis kari leaves and sautΓ© altogether on medium to low heat.
The onions will become light golden first. Stirring often continues to sautΓ©.
Beautiful golden color and aroma will come at this stage.
Make a bag (potli) of whole spices of pulao. Keep it aside.
Now add Β½ cup of water and cover the lid.
Now remove the lid and add crushed garlic and sautΓ© for some seconds until the raw aroma of the garlic goes away.
Add meatballs one by one and fry them. Donβt use a spatula at this stage.
Add dry plum and turmeric powder and two tablespoons of water and mix softly and gently.
Now add 1400ml water (if you are using steamer then use water according to your need, depending on the quality of rice you have used, you can add less or more water. You can option to replace water with stock.), whole spices bag (potli), green chili, crushed ginger, chicken powder and salt and cover the lid for a boil.
Remove the lid and add 1 tablespoon of lemon juice and saffron. Again, cover the lid for 10 minutes on high flame.
Remove the lid and take out the meatballs from soup. Keep it aside.
Add soaked rice and mix gently with the rest of the ingredients.
Mix rice gently for 1 to 2 minutes on a low to medium-low heat, so that the rice grains get evenly coated with the oil or ghee.
Cover and cook the rice until all the water is absorbed. Cook on a low to medium heat. In the beginning, cook on a medium-low or medium heat and then halfway through, lower the heat.
Check a few times during cooking to ensure there is enough water. Depending on the quality of rice, you may need to add more water. With a spatula, you can also gently stir the rice without breaking the rice grains.
When the rice has absorbed all water, fluff them and put meatballs over it and let the rice stand for 5 minutes covered with tight lid.
Remove the lid and dish out pulao and keep meatball pearl on top and garnish with nuts.
Meatball Pearl
Take 6 cooked meatball and cover them one by one with silver papers (Chandi k wark). Must watch video for this process. Pearls are ready.
Garnishing
Take a pan and add butter on low to medium flame. Add nuts when butter melted. SautΓ© nuts on low heat for 2 minutes. Nuts are ready for garnishing.
